I promise once you make this chocolate cake it will become your new favourite recipe! It can be dressed up or down and is a great birthday cake option!

You Will Need:
For the Cake:
6oz Caster sugar
4oz Self-raising flour
2oz Cocoa powder
6oz Melted unsalted butter
3 Eggs
1 Teaspoon of instant coffee powder
Splash of milk
For the Ganache:
150g Dark chocolate (or 75g milk chocolate, 75g dark chocolate is nice too for a sweeter ganache!)
pinch of salt (this sounds like a strange thing to add to a ganache but it really helps to bring out the flavour of the chocolate!)
150ml Double Cream
Method:
- Preheat the oven to 180 degrees celsius (fan).
- Add all the cake ingredients to a large bowl and whisk until it forms a smooth batter.
- Spoon the mixture into a lined and greased cake tin.
- Bake in the middle of the oven for around 25 - 30 minutes. To check the cake is cooked stick a skewer into the middle of the cake and check in comes out clean.
- Transfer the cake to a plate.
- To make the ganache break the chocolate up into a microwaveable safe bowl and pour over the double cream and pinch of salt.
- Microwave at 30 second bursts until the cream begins to bubble.
- Stir the mixture until smooth and glossy (you will think it's not coming together... keep mixing - it will!)
- Pour the ganache over the cake and allow it to drizzle down the sides.
- Serve ideally whilst warm! Enjoy!
